Creole Seafood Burritos

This is another wonderfully simple dish that is great for the whole family. It is mild and child-friendly but can easily be made ‘dad friendly’ with the simple addition of some hot salsa or even a few finely chopped Ring of Fire chillies at the end of cooking. We love to cook this on the beach at the end of a long day when nobody really wants to go home. It’s always worth throwing a few useful ingredients in a cold bag when you go out for the day – there is nothing worse than having to cut a perfect day short because everyone’s hungry!

25 g/2 tablespoons butter

1 onion, chopped

2 garlic cloves, finely sliced

½ teaspoon ground Ancho or other dried chilli

1 teaspoon Creole spice blend

225 g/8 oz. cooked/lump white crabmeat

125 g/4 oz. peeled cooked prawns/shrimp, chopped

100 g/1 cup grated Gruyère cheese

6 plain 25-cm/10-inch flour tortillas

sour cream, to serve

Green Pepper, Tomato & Habanero Chilli Salsa (see page 118), to serve

sea salt and freshly ground black pepper

shredded lettuce leaves, to serve
